Ingredients; 1 1/2 tablespoons olive oil, 1 10-ounce bag fresh spinach, 1 tablespoon pine nuts, 2 tablespoons grated Parmesan cheese, 3 tablespoons Mrs. Dash garlic and herb seasoning blend, 1 pound snapper fillets
Step 1; Heat 1/2 tablespoon olive oil over medium- high heat in a large heavy skillet. Add spinach. Cover and cook for 4-5 minutes or until spinach is wilted.
Step 2; Place spinach on platter; sprinkle with pine nuts, grated Parmesan cheese and 1 1/2 tablespoons Mrs. Dash garlic and herb seasonings blend. Toss well and keep warm.
Step 3; In large skillet, add remaining olive oil; heat over medium-high heat. Sprinkle fish fillets evenly with remaining Mrs. Dash garlic and herb seasoning blend. Add fish fillets to skillet and cook 2-3 minutes, or until fish flakes easily with a fork. Serve on spinach.
