Grilled Mahi & Veggies
Ingredients: Dolphin steaks (Wahoo works well also), 1 large sweet onion, 1 large bell pepper, small container of fresh mushrooms, lemon butter, Wishbone dressing, and Tony Chacheres Creole Seasoning.

Ingredients for lemon butter: 1 stick of real non salted butter, 1 teaspoon soy sauce, 1 teaspoon Worchester sauce and the juice from 1 small lemon.

Cut the dolphin steaks into 2” chunks, cut the onion into 1/8, chunk up bell pepper, and cut the mushrooms in 1/2. Place the fish and veggies into a pan and coat them liberally with Italian dressing and Tony Chacheres Creole seasoning and marinate for 15-30 minutes. Place the fish and veggies in a fish basket (coat the fish basket with non stick spray first) and grill over a good hot fire occasionally basting with lemon butter. Shouldn’t take more than 10-15 minutes, thee veggies should be just a little crunchy.

This is a really fast and easy and hard to beat. Pretty much a complete meal, although not bad served on a bed of Pasta.
