Snapper & Pine Nuts on Spinach
Ingredients: 1 1/2 tablespoons olive oil, 110-ounce bag fresh spinach, 1 tablespoon pine nuts, 2 tablespoons grated parmesan cheese, 3 tablespoons Mrs. Dash garlic and herb seasoning blend, 1 pound snapper fillet.

Step 1: Heat 1/2 tablespoon olive oil over medium- high heel in a large heavy skillet. Add spinach. Cover and cook for 4-5 minutes or until spinach is wilted.

Step 2: Place spinach on platter; sprinkle with pine nuts, grated Parmesan cheese and 1 1/2 tablespoons Mrs. Dash garlic and herb seasonings blend. Toss well and keep warm.

Step 3: In a large skillet, add remaining Olive oil; heat over medium-high heat. Sprinkle fish fillets evenly with remaining Mrs. Dash garlic and herb seasoning blend. Add fish fillets to skillet and cook 2-3 minutes, or until fish flakes easily with a fork. Serve on spinach.
